You will be able to customize all of your cutting preferences like thickness of steaks & weight of roasts when purchasing an entire side of beef. The cut sheet can be fully customized to your liking and you will detail out which cuts you would like and which you would like to grind. An average hanging weight for a side is 400-450lb.
We charge based on hanging weight and then you pay the butcher for processing . All beef is frozen and vacuum sealed for your convenience.
(It is important to note that hanging weight is not the same as take home weight. Expect take home weight to be about 60% of carcass hanging weight)

This is still a good option for a family. A quarter is not simply a hind quarter or a front quarter but rather a "split half" or mixture of the two. A typical quarter weight would be between 200-225lbs (*hanging weight).

We offer customized box options for those not ready to purchase a quarter of beef. This is a great option if freezer space is limited. A typical box contains 10lb ground beef and 10-15lb of steaks, cubes, chip steak and/or roasts. Basically, we try to accommodate your preferences as our supply allows. The price of a box varies depending on the content.
